Executive Chef and Owner
Baldo Baldassare found his
passion for cooking while
growing up working in his
family restaurant located
in Liguria, Italy
(Northern Italy). He
brought his passion to
life by attending culinary
school in Casino of Menton
(South France).
After graduating,
Baldassare brought his
Sicilian roots to America
and opened Baldo Bistro on
Greenwood Lake in 2022.
The menu consists of
classic Italian cuisine
with dishes from Southern
and Northern Italy, and
the restaurant has a large
wine selection and
full-service bar.
Baldassare brings original
Italian recipes directly
from his family, freshly
made pasta, and
thin-crust,
traditional-style pizza
with inspiration from Chef
Giovanni Polini. He will
also incorporate modern
American fare to add a
twist to the menu, such as
fresh lobster rolls,
house-blend burgers, and
Italian & American
small plates for our
guests to share amongst
themselves.!
